采后水果保鲜技术研究进展

  摘 要:水果在人们日常膳食结构中占有重要的地位,但大多数水果极易衰败,造成严重的经济损失。综述了近几年国内外水果采后保鲜技术的原理和研究进展,包括辐照、减压和气调等物理保鲜技术,使用化学保鲜剂和熏蒸等化学保鲜技术,以及植物精油保鲜和涂膜保鲜等生物保鲜技术,分析了当前保鲜技术的优缺点,展望了今后的水果保鲜技术发展趋势。

  Abstract: Fruits are very important in our daily diet, but most of them are easy to perish, which bring great damage during storage. The principle and research progress of postharvest preservation of fruits at home and abroad in recent years were reviewed in this paper, including physical preservation techniques such as irradiation, decompression and atmosphere control, chemical preservation techniques such as chemical preservative and fumigation, and the use of plant essential oil preservation and film preservation and other biological preservation technology. The advantages and disadvantages of current preservation technology were analyzed, and the development trend of fruit preservation technology in the future was prospected.
