畜禽血液在食品工业中的应用

  摘要:我国是畜禽养殖第一大国,畜禽血液是屠宰加工过程中主要的副产品之一,资源十分丰富。因血液中含有丰富的蛋白质、必需氨基酸和多种具有生物活性的物质,在食品工业中具有广阔的应用前景。因此,深度开发和利用畜禽血液资源是提高畜禽产品附加值的重要途径,也是建设资源节约型和环境友好型社会的重要举措。介绍了畜禽血液的资源概况,探讨了国内外畜禽血液在食品工业上的应用现状,并对我国畜禽血液的高值化应用前景进行了分析,以期为更好地开发利用畜禽血液提供参考。

  Abstract:China is the largest country in livestock and poultry breeding. So the blood of livestock and poultry is one of the main by-products in the process of slaughtering and processing. Because the blood is rich in protein,essential amino acids and a variety of bioactive substances. Therefore,it has a broad application prospect in the food industry. The deep development and utilization of livestock and poultry blood resources is an important way to improve the added value of livestock and poultry products,as well as an important measure to build a resource-saving and environment-friendly society. This paper introduced the general situation of livestock and poultry blood resources. The application of livestock and poultry blood in food industry at home and abroad was discussed. The application prospect of high value of livestock and poultry blood in China was analyzed. In order to provide reference for better development and utilization of livestock and poultry blood.
