基于健康食品原料视角的新型茶食品加工

  摘 要:传统茶食品仅将茶叶或茶汁简单添加到食品中,一定程度上改善了食品的风味和品质,但食品本身高糖、高热、高脂的属性并未得到很好改善。本文基于健康食品原料视角,研究了超微茶粉、茶油、功能性低聚糖和益生菌4种适于添加到茶食品中的健康食品原料,通过将这几种食品原料与茶食品加工相结合,生产出低脂、低热量、高纤维、高益生菌的新型茶食品,使茶食品成为真正意义上的营养、健康食品,旨在为茶食品生产业提供发展新思路,为茶食品吸引消费者、扩大市场份额提供理论研究基础。

  Abstract:Traditional tea food added tea or tea infusion in food simply, it could certainly improved the flavor and quality of food in a certain extent, however the attributes of high glucose, high fat and high calorie did not be improved obviously. Therefore, four kind of healthy food materials that suitable for adding in tea food, named ultramicrosome tea powder, camella oil, functional oligosaccharides and probiotics were studied this paper, based on the innovation of food materials. In order to explore the combination of these food materials and tea food ,and produce a new type of tea food with low fat , low calorie and rich in cellulose and probiotics, and make tea food a nutritional and healthy food. Aims at providing novel idea of development to tea food industry, and giving foundations of theoretical research to attract consumers and expand market share.

  茶食品是指将茶粉、茶汁或茶叶提取物等作为食品原料加工制成的各类食品。将茶叶直接食用,将可以摄取到茶叶中的多种维生素、矿物质和膳食纤维等营养成分,达到营养健康甚至防病治病等多重功效。茶食品市场的发展有赖于消费者对健康营养食品的热衷,茶食品将食品和茶叶完美结合,赋予食品原茶的香郁和营养成分,符合现代人追求方便快捷和营养健康的需要。
