柿果实水溶性提取物的抗氧化活性研究
摘要:水果具有加快人体体能恢复、延缓衰老的作用。研究利用DPPH法测定罗田甜柿(Diospyros kaki)果实水溶性提取物的抗氧化能力,经优化的最佳反应条件为40 ℃反应15 min。1 g/mL的柿果实水溶性提取物相当于1.5 mg/mL维生素C的抗氧化效率。对比甜柿果实提取物3种水性溶剂的抗氧化效率,水提取物的抗氧化活性最高,Tris-HCl缓冲液提取物次之,PBS缓冲液提取物抗氧化活性相对较差。

Abstract: Fruits play an important part in quickening energy recovery and slowing aging process. the antioxidant capacity of water-soluble extracts from fruits of Diospyros kaki was measured with DPPH method. Results showed that the optimal reaction condition was at 40 ℃ for 15 minutes. The antioxidative capacity of 1 g/mL water-soluble extracts from persimmon fruit was equal to that of 1.5 mg/mL vitamin C. Comparing the antioxidative capacity of H2O,PBS,and Tris-HCl aqueous solvents,the best one was H2O,while the least one was PBS.
